Hyo-dong Gak in Euljiro is widely regarded as one of the best places in Seoul to eat jajangmyeon β the thick black bean noodle dish that is a cornerstone of Korean-Chinese cuisine. Open since 1937, the restaurant has been perfecting its recipe for nearly a century: handmade noodles topped with a savory sauce of fermented black bean paste, diced pork, and vegetables. The interior is no-frills and the prices are reasonable, but the depth of flavor in the sauce β developed over decades β is something few other restaurants can match.
