Gaya Milmyeon is credited as one of the originators of Busan's signature cold noodle dish, milmyeon, having served it since 1966. Unlike Seoul's naengmyeon β€” made with buckwheat β€” milmyeon uses thin wheat flour noodles, giving them a softer, silkier texture. The broth is a clear, cold beef stock with a subtly sweet and tangy flavor, served with a boiled egg, sliced beef, and cucumber. Busan locals are fiercely proud of milmyeon as their own dish, and Gaya is considered one of the best places to taste the original.
